I went a little crazy and bought nearly 200 tree seedlings to plant in the paddocks. I've chosen a lot of native flowering trees to feed the bees and provide shade, as well as tagasaste, which will feed both the bees and the cattle.
Now to get them all in the ground!

Grass-Fed Beef Tacos

Ingredients:

1kg Bluevale Homestead grass-fed beef

2 onions, chopped

6 garlic cloves, minced

6 tbsp tomato paste

1 cup water

4 cups frozen veggies, or whatever veggies you like (grated zucchini and carrot work really well)

2 cans of beans, drained

3 tsp onion powder

3 tsp garlic powder

3 tsp dried oregano

6 tsp cumin

6 tsp paprika

3 tsp salt

½ tsp black pepper

Cayenne pepper, to taste (optional)

Method:

Heat a large pan over medium heat. Add the chopped onions and garlic, and sauté until soft.

Add the beef and cook until browned.

Add all the spices (onion powder, garlic powder, oregano, cumin, paprika, salt, pepper, and optional cayenne) to the pan and toast for 1–2 minutes, stirring constantly, until fragrant.

Stir in the tomato paste, water, frozen veggies, and drained beans. Mix well.

Reduce heat and simmer for 15–20 minutes, stirring occasionally, until the sauce thickens and the flavours meld together.

Serve in taco shells or soft tortillas with your favourite toppings like avocado, tomato, lettuce, cheese, or sour cream.

This recipe makes enough filling for a crowd — perfect for family Taco Tuesday or batch cooking for the freezer!

I grew a lot of jam melons this year, so whatever I'm not turning into jam and relishes, I'm feeding to the pigs. I've had to split them open for them, but once I do they really get stuck into them!

This week we put in some permanent electric fences for the pigs. This will make shifting the pigs regularly so much more time efficient! We are so grateful for the help our friends @dragonfieldsfarm and @clever_bugs gave us. It's always more fun working with friends!

We drove to Dalby today to pick up some more grain for the pigs. They hadn't filled my 1 t bag yet, so we got to watch it being filled. It was a bit of a process setting everything up, so I now understand why it's more expensive buying in these bulka bags compared to by the truckload!

I'm so happy with how this pasture we planted two years ago is growing! I intend to put a few more species in there in Autumn, but right now the rhodes grass, lucerne and desmanthus are really pumping. The cows certainly appreciate it! One day all of our pastures should look like this!

We move our cattle everyday, as we are trying to increase the rest period of the pasture between grazes. This enables the pasture to fully recover before it is grazed again, resulting in stronger healthier pasture, healthier soil, and healthier cattle.
Considering how little rain we have received, I am really happy with how these paddocks are responding to our grazing management. There are more desirable species popping up, and I look forward to seeing the improvement over time!
